Here is a veggie stir fry I made last night. First, I sauted some sliced mushrooms in a little Extra Virgin olive oil. I then added some onion and garlic. Then some broccoli and some sliced sweet red and yellow peppers and a sprinkle of salt and pepper. We love our veggies "al dente" so it didn't take long to have this dish on the table. (You could add a splash of soy sauce or a little chicken broth if you'd like.)
