HAMBURGER SOUP

If you're looking for an easy way to "Eat a Rainbow" every day...try my Hamburger Soup.  And the aromatherapy that wafts from that simmering pot of soup will be "good for what ails you" as my Dad used to say!



Hamburger Soup

1 ½ lb. ground beef
3 cups water
2 beef bouillon cubes
1 cup onion-diced
2 cloves garlic-minced
1 cup celery-diced
1 cup potatoes-diced
1 cup carrots-diced
1 tsp salt
1 tsp Kitchen Bouquet
½ tsp fresh-ground black pepper
1 bay leaf
1/8 tsp dried basil
1 28 oz can tomatoes

Brown ground beef and drain. Add garlic, onion, celery, potatoes and carrots and sauté a few minutes. Add all remaining ingredients. Simmer, covered for at least 30 minutes, stirring several times.

VARIATIONS:

Feel free to add whatever “extra” veggies you have in your refrigerator. (zucchini, mushrooms, frozen corn, frozen peas, etc.)  If you don't like a vegetable in the list...leave it out, and add more of something you like!

You can also add a small handful of dried pasta…or maybe a can of black beans for more protein. (FYI...Be sure to drain and rinse canned beans before adding, since they are packed in some "yucky" liquid.)   Just add more liquid to your soup if needed, and some more bouillon cubes for more rich flavor if desired. Be sure to DECREASE the added salt if using bouillon cubes since they are high in sodium.
